There are few people in the world who do not like sweets. But all sweet tooths can be divided into many groups. Some like sweets with a filling of nuts, others - with marmalade, others - with fudge... How to understand all this variety? What are chocolate sweets in general?
The chocolate from which sweets are made can be bitter, or milk or white. It can be dense, or it can be porous. Candies can be made from chocolate without additives, or they can be from chocolate with a filler. The additive (do not confuse it with the filling, the additive is put directly into the chocolate) can also be chosen for any taste: coffee, vanilla, candied fruits, various food essences...
Chocolate candies with filling are a separate category, and each of the fillings is beautiful in its own way. For example, fondant candies are made from a finely crystalline mass of sugar and molasses, into which milk, fruits and berries are mixed. Fondant-cream filling, as well as fondant-cream filling, are especially popular in our country.
Grilled candy filling is made from crushed nuts, mixing them with sugar or honey syrup. There are also fruit-grilled candies, which use fruit syrup. As a rule, such candies are named depending on which fruits are used in the filling.
Pralines are also made from nuts. For such a filling, roasted kernels are ground with sugar and fat, so that a soft mass is obtained. To get a more interesting taste, cocoa, cognac or liqueur are sometimes added to pralines.
Another type of sweets that is in stable demand is candies with the so-called whipped mass, or souffle. The most famous souffle candies are “Bird’s Milk”, and this name eventually spread to all delicacies of this type, even to cakes and pastries.
The filling for “bird’s milk” is made from sugar syrup and egg whites, which are whipped to a foamy state. Sometimes chocolate or berry syrup is added to the mass for the future souffle.
Souffle candies are somewhat reminiscent of another type of sweets with a soft filling – marmalade in chocolate, or jelly candies.
The manufacturing principle is similar – a soft marmalade body is poured with chocolate. The result is a wonderful delicacy with a hard chocolate glaze and a soft, melting-in-your-mouth filling.
Candies with alcoholic fillings – liqueur, cognac and even vodka – are always original in taste. There are wine candies (they contain only alcohol), milk candies and fruit candies (cream or fruits and berries are added to them). The famous “Cherry in liqueur” is from the latter category.
Candies with wafers inside have been loved by our people for many years. Once they were considered an exquisite and expensive delicacy that was difficult to find in stores. Today, anyone can treat themselves to this candy.
The latest “trend” in the candy world is candies filled with dried fruits. Whole dried apricots or prunes, glazed with white or dark chocolate, are an excellent decoration for a festive table or an everyday tea party.
